I’ve been dumped. This isn’t a pity post in any way but I have to say that to get to the inspiration of my day. It was quite strange, the energy I felt after the phone call. We live in different states, I am grateful for that now. I popped up and decided to get to cooking instead of crying. In a haze of shock and….anger? I found a couple of yummy recipes that I wanted to prepare for the week ahead. This cucumber salad turned out great! Check out the original recipe up top. This is the kind of recipe that gets me excited for the upcoming spring weather. Instead of farro, I used quinoa. I used cilantro instead of mint/parsely and omitted the sun dried tomatoes, I didn’t have any but can see how it would add a depth of flavor into the dish. I’m excited to try out the original recipe when I have the money! I’m not going to let this get me too far down, I’ll use how I feel for something productive.
